I decided to cook the kangaroo tail in a red Thai curry and it did not disappoint! Normally I have issues with kangaroo due to the gaminess, but I soaked it in milk overnight, rinsed and let it dry before searing it. Saute the aromatics, red curry paste, add the tail in with stock or water to cover. I added some fish sauce and rock sugar to taste and let it cook low and slow. Add some coconut milk at the end and that was it. Beautifully fall off the bone tender and not a hint of gaminess at all. I will cooking this again for sure!
Have not cooked it yet am absolutely enjoying the other meats and various vegetables recipes I have learnt. I got these meats to help put my diabetes in remission best thing I have done in a while. And cheers got the venison bones to make broth yum
Delicious, tender and easy to manage the 3 roast.
Made an Italian style slow cooked ragout, stripped the meat from the bone when cooked, 3 shanks with paperadelle feed 6.
Everyone happy. Good product.
