Cooking tips:

  • Brown tail portions in a pan prior to wet braising for maximum flavour.
  • Very slow wet cooking: gives you a tender result that falls apart, similar to ox tail. Think rich and hearty stews, curries and soups.

Packaging & Storage:

This product is vacuum sealed fresh. Once opened, consume within 2 days. Or you may freeze prior to use-by.

Tail - Something New

Cooking with Roo Tail is not as challenging as I expected, needs a bit of thought, still a very good choice for a curry.. Love the this. Will buy again

Wild and wonderful.

My Son cooked the Venison racks on the Weber. Fast and hot. Rare and tender. Five stars for the raw Ingredients and chefs execution. My Roo Tail Bourguignon was sticky and tender and mouth watering. I made a frittata with the grilled Venison chorizo and Wild boar salami for a picnic. All diners requested a link to your shop. 😎

Today I’m stewing the goat Filipino style making Kalderetang Kambing … an unknown adventure using a friend’s Mother’s recipe. It is smelling really good. I’ll let you know how it turns out.

I was super impressed by the entire process from order to cold store delivery. 11 stars from me and thanks to my Son for putting me on to you. Sustainable and delicious. All boxes ticked.

I slow cooked the kangaroo tail in a fairly simple stew
A Nd it was fantastic I was so impressed with the flavours ,
