I really enjoy venison, but it is so difficult to cook and is the most temperature sensitive meat to cook that I have ever used. It does not like being over cooked 57C and anything over that it is destroyed and looses its delicate tenderness. Still trying to master this wonderful meat.
I wasn’t sure what to expect as it was my first time order. Exceeded all my expectations. First of all the delivery and packaging. Faultless, the driver went above and beyond to leave the box at our doorstep tackling a difficult access. The packaging was impeccable . The meat - a true gourmet experience. Wild goat, boar, venison, rabbit, salami, chorizo. I am hooked, my family loves it. I will be ordering again and recommending to all my family and friends.

We slow cooked the rabbit in cider with prunes and finished with some cream - absolutely delicious and the recipe is available on the Australian Meats web site, thank you!
This was a truly superb piece of venison. Divided into pieces of two points each with 4 of these placed onto a large skewer (between the points and through the eye of the double cutlets) and grilled over natural coals on a barbecue for 5 minutes a side and a further 5 minutes on the top and bottom edges.
Accompanied by a Redcurrant and Bordeaux jus and served medium rare.
We were very happy with this product, the transport, delivery and service generally.
Highly recommended.
