Size

8 point wild venison rack is something a little different for the dinner table. It is best roasted in a hot oven and served medium rare, similar to how you would roast a lamb rack.


Cooking tips:

  • Use a rub of spices such as crushed peppercorn, cumin and coriander prior to cooking.

Packaging & Storage:

This product is vacuum sealed fresh. Once opened, consume within 2 days. You may freeze prior to use-by.

Wonderful flavour

Extremely fine quality venison. Can stand up to strong flavours. I basted the rack in a tamarind, soy and honey sauce.

Spring Ridge Venison Rack

This was a truly superb piece of venison. Divided into pieces of two points each with 4 of these placed onto a large skewer (between the points and through the eye of the double cutlets) and grilled over natural coals on a barbecue for 5 minutes a side and a further 5 minutes on the top and bottom edges.

Accompanied by a Redcurrant and Bordeaux jus and served medium rare.

We were very happy with this product, the transport, delivery and service generally.

The Rack!

First time I have ever cooked one of these so I did my homework. 57 degrees is recommended for medium rare so a reliable thermometer is crucial. So is the resting part. I can’t stress this enough. I put 20 minutes on the clock once the rack was done and it only took 14 minutes from start to finish! Deglazed the pan with some of the old boy’s port 😂 , some butter and the residual pan drippings, and a little Shiraz paste. The result? Bloody spectacular! Carved up like melted butter and I certainly wasn’t sharing 😂 Thank you Australian Meats! What a bloody ripper night we had 💝💝
