The Australian meats are all excellent quality, beautifully prepared products.
For those hesitant to cook these game meats like these step loins, I recommend my method, light salt and leave out on a plate for at least 2 hours prior to cooking, these require an intense heat to flash cook them, a searing cast iron griddle pan is good, my favourite is in the fire box of my slow combustion wood heater on a long barbecue fork over red hot coals. A minute each side and out into foil and wrap in oven mits and put in a warm place to rest about 5 minutes. Then when the rest of the meal is plated , on a wooden board with a sharp carving knife, slice thinly across the loin at a 20° angle to the board surface. Fan the slices on the plate and drizzle with the juices. Enjoy the best meal ever!
Tried the blackstrap diced with Thai and Indian curries. Perfect cut of meat for this.
My family enjoyed the meat. Will definitely order more.
